Preserve Wine with a Nitrogen Purging System

Many establishments that serve draft beer also serve wine by the glass.  When a wine bottle is uncorked  for serving one or two glasses, the entire contents of the bottle are exposed to oxygen.  This exposure alters the constitution of the wine.  While some heavier wines that contain more tannins may benefit in taste from being aerated, other more delicate wines may be damaged from prolonged exposure to oxygen.  In either case, the best scenario for storing uncorked bottles of wine is to purge the bottle of oxygen in to preserve its intended taste and aroma.
